Steamed egg cake (malai ko)

A signature dish at the restaurant. “Malai ko” (literally translating to “Malay cake”), as the name implies, is suspected to be of Malay origin. It is meticulously prepared here – for example, two days are set aside just to ferment the cake’s yeast. The result is a soft, spongey cake that has a seductive whiff of honey about it. It’s pretty good, but not the best I’ve tasted – its dryness may have something to do with it.
