You could imagine this crab having a magnificent posthumous career as a centerfold model in a foodie porn magazine. This deceased crustacean is telling you that it wants to get intimate with your mouth. In your mouth. Whatever.
Anyway, my verdict is an enthusiastic thumbs-up. The soaked chee cheong fun is a buttery, creamy tour de force and when paired with the wonderfully fresh crab meat makes a magnificent, explosions-in-mouth combo. No surprise at all that the restaurant considers this as one of its signature dishes.
