This is when the chee cheong fun comes in. Placed on the dish, the noodles are then mixed about to ensure that they’re sufficiently soaked with that good, rich sauce (ie. the chicken fat).
This whole setup is quite brilliant. I’m thinking of fettuccine alfredo or carbonara because this really is a wonderfully inventive Oriental answer to those.
